Love raw clams? Hold off until the winter! Vibrio, a naturally occurring salt water bacteria, proliferates in the summertime. Cooking the clams kills the bacteria and makes them safe to eat. We don't recommend eating raw clams in June, July, or August.Remember that consuming raw shellfish increases the risk of foodborne illness.
