Born in a tumble farm but raised on the beach, Nymphs are the frillier, prettier counterpart to the Sea Cow, our other Hammersley Inlet oyster. We think of them as Cows with a bit of flair: their deep, fluted cups and firm texture make for a beautiful presentation, and their flavor is a pleasant contradiction of sweet and briny, with some gentle, kelpy undertones.
