Invariably, whenever we talk with customers in our retail store about oyster recipes, this one comes up. It's a big deal among a certain demographic, and we love it so much we want to bring to the masses. Don't be shy or ashamed: easy and simple are the goals, Saltines are delicious, and so is this dish.
Don't knock it till you try it. We promise it's yummy. Feel free to spice it up with sauted vegetables, bacon (!), and/or herbs.
1 pint oysters, drained and chopped
4 cups saltine crackers (2 sleeves), coarsely crushed
Pepper to taste + salt only if you love salty things
1/4 cup onion, finely chopped
1/2 cup butter, melted
1/4 cup olive oil
4 cups milk
Mix all ingredients together in a large bowl. Spread in a shallow baking dish so that mixture is no more than 1½ inches deep. Bake for 30 minutes at 450 degrees.
